Oyster Bar for the oysters?! Nope! Oyster Bar (at Palace Station) for the PAN ROAST! The Combo Pan Roast to be exact. It's a creamy tomato stew with shrimp, crab, and lobster, with a side of rice for $24.99. It's the best tomato stew I've ever had. It's the best Pan Roast I've ever had!

The only downside is the length of time one must stand in line before reaching the counter [insert sighing emoji here]. Folks, it's true. The average wait time is 1.5 hours. It is literally a bar top in the casino which seats approximately 15 people total, but the wait is worth it. Bring someone with you so you can rotate, walk around, play, and stretch.

Once you're seated, the magic happens right in front of your eyes. All of the ingredients are poured into hot kettles and are mixed until a little past boiling point. There are levels of spiciness available, too. The scale: 1-3 for Amateur, 4-7 We're Impressed, and 8-10 We Dare You. It's fun to watch the chef layer in the veggies, soup base, bourbon, protein, and sprinkle in the spices. Ahh the aroma. Presto! The Combo Pan Roast is that perfect tomato stew. A lot of soup and more than enough seafood. A spoonful of the stew with rice is just heavenly. Mmm!

The Crab Pan Roast was good. It differs from the Combo Pan Roast in that there's just a lot of crab meat so it's not as soupy. It's crabby smelling, with a crabby texture, and full of salty crabby flavor. I still prefer the Combo!

Why not?! Order the oysters, too. We sat there drooling as they were shucked one by one. Plated over plenty of ice and served with horseradish, lemon, and cocktail sauce. A dozen satisfied our craving for chilled, raw oysters.

Btw, if you usually have a small appetite, one Pan Roast with rice is great for sharing. Especially if you order oysters, a salad, and eat the complimentary bread. But if you can take home the leftovers, it still tastes wonderful heated up the next day.

I have been to the Oyster Bar at Hard Rock Hotel. The wait is much shorter, but it just doesn't compare to the bar here at Palace Station! Service was great. Food is excellent. This Oyster Bar has it goin on!

This place is iconic! Located in the Palace Station Hotel and Casino on Sahara just before you reach the I-15.  They are serving up some of THE best Cajun food this side of the Mississippi.

We have tried just about everything on the menu and can say, everything is tasty.  We do however, keep coming back for the pan roasts.  I prefer the crab pan roast as they load it full of crab.  I'm a level 3 on the spicy scale.  I've seen people get a 7 and above and wonder how the hell they do it?? You can get a combo pan roast which is full of crab, shrimp and lobster.  They have gumbo, clam chowder, oysters, oyster shooters (yum) and even scampi and chicken Caesar salads if you are trying to eat "healthy". The shrimp cocktail is def worth the price!!! But...nothing beats the pan roast!

I debated on the 4 or 5 star rating here as the service can be hit and miss. It simply depends on the time of day you go.  My hubs and I try to beat the 24/7 crowds that form so we come around 5AM.  I can only assume that the chef is tired and cranky because he's worked his ass off all night, dealing with drunks and party peeps.  The waitstaff tends to be testy too.  You better know what you want and say it. That's it. Don't try with any small talk. I find the Monday chef to me one of the best.  The sat/sun chef over cooks his pan roasts so the sauce cooks down and you end up with a lot less.

But...we don't go for the small talk, we come for the food.  If you can get over that, you will go home fat and happy!

They definitely lived up to the hype! We ordered 1 Dozen Oysters that were large and excellent in texture as well as very delicious :)

Then for the main course my wife and I ordered the MUST have dish Combo Pan Roast.  All I have to say is forget-get-about-it .... We are in love with this place - We actually went to 2 days in row!!!

Chef Eze was our chef at the moment. We waited 1 1/2 hr or 2 in the line. But it was worth it the food was great really flavorful. I ordered the jambalaya and we ordered fresh oysters and shrimp cocktail. They were all good (i really don't like raw) but I had to taste it for the review. And they were all good. And portion for the bowl is big enough that's for the jambalaya it self.

Prices are pretty decent and good portion. But all of those order our bill came up to $70-$80 something dollars. Defiantly would be back to try the other menu.

You like gumbo? A lil taste of some of that crab or lobster pan roast? If you enjoy the tastes of southern cajun or creole authentic seafood look no further in Vegas, cause this is exactly what your looking for...there are some catches though..

Ok first things first...this place is extremely popular, you don't just pop up and sit down in a spot. If you go during normal eating hours expect a wait....a long wait...upwards of up to an hour. You walk through the smoke filled casino floor of the luxurious Palace Station past the craps and blackjack tables only to find a rope stanchion with a queue of happy smiling folks waiting to get their seats.

But trust me...if you haven't tried this place yet it's worth it. They have oyster shooters, crab pan roasts, lobster pan roasts, choices choices! They ask you 1 through 10 for spiciness level, trust me don't order above a 7, your not as tough as you think you are... In the 10 years I've been coming here I've never seen anyone order above a 7 and not tear up.

I order the number 4 spice combo pan roast, they are not stingy with the shrimp, crab or lobster.  If they serve it right you should have some leftovers to take home, if they don't like the weekend chef has been cooking lately you'll finish it in one setting as he lets it cook down to far longer then he should. NO LEFTOVERS FOR YOU!

The weekend staff tends to be more stern and snippy due to the late night boisterous drunk crowd they have to deal with, so be patient. I've heard of many fights breaking out on line during party hours...you can't reserve for other people, can't leave the line, and everyone that's eating better be there at seating.
If you don't like the wait or the casino choice there's an Oyster Bar at Santa Fe Casino, but trust me it's not the same.

If your itching for some Louisiana style cooking or want to impress some people from out of town with some authentic seafood gumbo stop by and visit the Oyster Bar. Having a long party night drinking, sober up waiting in line and drown the alcohol in your belly with a pan roast, you won't regret it.
